COS is a pioneering biodynamic estate in Vittoria, southeastern Sicily, founded in 1980 by three friends dedicated to traditional, low-intervention winemaking. Their Frappato comes from red clay soils and is fermented and aged in cement, producing a light, fresh, and aromatic red with an easygoing, almost Beaujolais-like character.
